Recipe of the Week: Chicken Strawberry Salad

ChickenStrawberry Salad

Common Grounds Shopping List:

  •  1 qt Strawberries (wash and quarter berries)
  • 1 Maggie’s Sherry Shallot Vinaigrette
  • 1 Berties Cashews (Use 1/4 cup)
  • 1 Clemson Blue Cheese (Use 1/2 Cup)
  •  2-3 heads Tega Hills Lettuce (wash and tear into bite size pieces)
  • 1 Package Arugula Microgreens (use all)
  •  1 loaf Dukes Bread (serve on side)

Other Ingredients:

  • 1 Rotisserie Chicken (remove skin and shred white meat)
  • Optional–slivered Red onion

Preparation:

To prepare salad, put in a large bowl strawberries, Tega Hills Lettuce, arugula micro greens, and chicken tossing gently. Place about 2 cups chicken/lettuce mixture on each of 4 plates. Top each serving with 1 1/2 teaspoons cashews and 2 tablespoons cheese. Drizzle about 4 teaspoons dressing over each serving. Serve with Duke’s Bread.
